These adorable Coffee Bean Cookies that are bursting with a bittersweet coffee flavor. These cookies are crispy, easy to make and can serve as a little pick-me-up during the day.
To be honest, I am not the one to create this recipe. I learned how to make these cute coffee bean cookies from a friend of mine. She’s a true coffee lover and you even can feel that for the first time if you’ve ever been invited to her house. Literally. Her house always smells like your favorite coffee shop, which drives me so excited every time I come over.
She enjoys eating baked goods as much as I do, sometimes she asked me to try her baked stuff if that was her first try ever. These coffee bean cookies are outstanding and should be her signature dessert, as it wins my heart every time she passes me her cookies!
COFFEE BEAN COOKIES ARE NOT ONLY FOR COFFEE LOVERS
Hmm, did I tell you that I am not a huge fan of coffee?
If yes, so you already knew me.
If I did not, sorry. Yes, I am not really into coffee. As suffering some consequences from drinking a few cups of coffee before, I knew that my body can’t tolerate caffeine, yet I need a cup of tea instead of coffee just to get me going in the morning. But I love the smell of coffee. So comforting. Time goes by, now I can start drinking coffee again but at the right amount, just like a sip of coffee or having coffee-flavored cakes. And these delicious coffee beans cookies too.
So, these adorable cookies are a dream for true coffee lovers but they can also be a good snack for those who are non-coffee drinkers like me, which I would probably bet that they cannot resist to bite one of them.
NO SPREAD COOKIE RECIPE
Cookies spread because the fat in the dough melts in the oven. This recipe does not call for spread cookies because there is the right amount of flour to hold that melted fat. On top of that, these cookies are shaped into coffee beans and even taste similar to it, which can prevent the cookies from staying flat under the heat of the oven. At the end of the baking process, these coffee bean cookies have a soft biscuit texture with rich coffee flavor and a hint of chocolate.
USE GOOD INSTANT COFFEE
While you can use a coffee brewing method to make your favorite cup of coffee, this cookie recipe will call for denser coffee liquid. I recommend that using instant coffee. Just stir a dash of instant coffee powder with a few tablespoons of hot water and add it to the batch of cookie dough. Well, enjoy the comforting aroma of roasted coffee floating around in your kitchen.
SHAPE THE COFFEE BEAN COOKIES
Okay, I think this is gonna be a fun and relaxing part to turn the cookie dough into little cute coffee beans. All you have to do is take a 1-inch small piece of cookie dough, roll it onto your palms until smooth. Then use a knife to press a line in the middle of an individual cookie dough to resemble a coffee bean. To help the cookies hold their coffee bean shape, chill in the refrigerator for about an hour before baking.

Coffee Bean Cookies
Ingredients
- 1 tablespoon (5g) instant coffee powder
- 2 teaspoon (10ml) boiling water
- 1/3 cup (75g) unsalted butter room temperature
- 1 cup (130g) all purpose flour
- 2 tablespoons (12g) unsweetened cocoa powder
- 1 egg yolk room temperature
- 2/3 cup (65g) powdered sugar
Instructions
- Preheat the oven to 350°F/175°C. Line a parchment paper onto a baking sheet or grease with cooking spray.
- In a small cup mix hot boiling water with instant coffee until coffee granules are fully dissolved.
- In a large bowl, soften unsalted butter using a rubber spatula or a mixer. Whisk softened unsalted butter and powdered sugar until combined. Then add the egg yolk, and whisk until incorporated. Pour the coffee into the mixture of butter and eggs and mix until combined. The mixture will turn into a light brown color.
- Sift together flour and cocoa powder into the wet mixture. Mix until the dough looks like coarse crumbs. Do not over mix. Then use your hand to mix and press the dough until smooth. Make sure that you mix the cookie dough, not knead it.
- To shape the dough: Roll the dough into a long log. Divide the dough into 1-inch pieces. Then using your palm shape each one into an oval shape, press the middle line with a knife or a toothpick. They will look like coffee beans. Place your cookies onto a prepared baking sheet. Chill the dough in the refrigerator for about an hour. Transfer the chilled dough to the oven. Bake for 13-17 minutes.
- Remove cookies from the oven. Allow the cookies to cool on a wire rack. Serve cookies at room temperature. Cookies can be stored up to 5 days in the refrigerator.

I’ve tried testing this a few times and 1 tablespoon is good enough. However, you can reduce the amount of instant coffee powder to 1/2 tablespoon to make it less bitter for you.
