Black Sesame Milk

A refreshing drink that is freshly made with the warm and nutty flavor from toasted black sesame and a touch of sweetness from condensed milk. Black sesame milk is purely a taste of culinary bliss from Asian culture.

Ingredients

  • 3/4 cup (100g) black sesame seeds
  • 1 cup (240ml) filtered water
  • 4 cups (960ml) your choice of milk (almond milk, cashew milk, soy milk, or whole milk)
  • 1/4 cup (75g) condensed milk, or other sweetener like honey, dates, granulated sugar, adjust to taste
  • A pinch of salt

Instructions

  • Toast Sesame Seeds: Toast the sesame seeds for 5-7 minutes on the stovetop on medium-low heat or 8-10 minutes in the oven at 350F/175C until the seeds are slightly popping and you can smell the aroma. Occasionally stir with a wooden spoon while toasting to prevent the seeds from burning. Remove from heat and continue to stir for one minute, then let them cool.
  • Blend With Water: Once the sesame seeds are cool, add them to a blender with water and blend on a high speed for a few minutes until the mixture is smooth and the seeds are completely blended. If you use dates as a sweetener, you can blend together with the seeds at this step.
  • Strain The Mixture: Use a nut milk bag or cheesecloth to strain the mixture into a medium saucepan. Discard the pulp.
  • Mix With Milk:  In a medium saucepan, whisk the seed mixture with your milk of choice until combined. Whisk in sweetener as desired (in this case is condensed milk) and adjust the sweetness to taste. On medium heat, bring the mixture to simmer, stirring occasionally then remove from heat.
  • Serve immediately hot or with ice. Store the milk in an airtight container or sealed glass jars in a fridge for 3-5 days or keep frozen for up to a month.

Notes

Toasting time will be longer if you are using a small pan or a half baking sheet for the same amount of sesame seeds.
