Strawberry Banana Popsicles

Turn your favorite strawberry banana smoothies into popsicles! These creamy Strawberry Banana Popsicles are made with fresh fruits and a touch of yogurt and coconut cream. They are easy to make and perfect for keeping you cool all summer long.

When strawberries pop in our local market, I know it’s summer time. And nothing beats summer heat better than frozen treats. Matcha ice cream, strawberry cheesecake ice cream, black sesame ice cream for those who love nutty flavor. And while we almost have bananas in our house, with fresh juicy strawberries in season, I can finally turn the nostalgic strawberry banana smoothies into frozen treats. 

These strawberry banana popsicles are creamy and refreshing. They’re bursting with the natural sweetness of strawberries and the creamy goodness of bananas and coconut milk. I add a bit of condensed milk to mine for extra sweetness, but you can leave it out if it’s already sweet enough for you.

STRAWBERRY BANANA POPSICLES INGREDIENTS

These popsicles are made with just 6 simple ingredients. Here’s what you’ll need:

  • Fresh or frozen bananas
  • Fresh or frozen strawberries
  • Plain yogurt or Greek yogurt
  • Coconut milk or coconut cream
  • Sweeteners: condensed milk, honey, sugar.
  • A dash of lemon juice (optional)

HOW TO MAKE STRAWBERRY BANANA POPSICLES

Making these homemade popsicles is easier than you think. All you have to do is blending everything together, pouring into popsicle molds, and letting it all freeze! 

You can blend together and pour into the mold or make 2 separate layers for a distinctive flavor of each (like I did!). 

SUBSTITUTIONS

This recipe is customizable. You can substitute with your favorite berries, frozen or fresh. I recommend using fresh fruits in season so you can get the best of them.

Make sure to use great ripe fruits for the best natural sweetness. And depending on the natural sweetness of your fruit, you can choose to adjust the condensed milk level to suit your taste.

Feel free to use any kind of milk you want. You can substitute coconut milk with heavy cream, whole milk or your milk of choice.

For Strawberry Layer

  • 1 cup (200g) strawberries, washed, hulled and quartered
  • 1/2 cup (120g) plain yogurt or Greek yogurt
  • 2 tablespoons condensed milk

For Banana Layer

  • 2 medium ripe bananas
  • 1/2 cup coconut cream
  • 1 tablespoon condensed milk
  • A dash of lemon juice (optional)

Instructions

  • Make The Strawberry Layer: Combine strawberries, yogurt and condensed milk in a blender and blend until smooth. Pour into molds, filling molds about 2/3 full and set aside.
  • Make The Banana Layer: Combine bananas, coconut cream, condensed milk and a dash of lemon juice in a blender and blend until smooth. Pour into molds on top of the strawberry mixture. Leaving a little space at the top for them to expand. Insert sticks and freeze for at least 8 hours.
  • Run the mold under warm water for a few seconds to loosen them up, then remove from the mold. Enjoy!

Notes

*Feel free to blend them together if you prefer that way.
* You can sub fresh for frozen fruit if you'd like.
* You can omit or adjust the condensed milk to suit your taste.
