Coffee Bean Cookies

These adorable Coffee Bean Cookies that are bursting with a bittersweet coffee flavor. These cookies are crispy, easy to make and can serve as a little pick-me-up during the day.

Ingredients

  • 1 tablespoon (5g) instant coffee powder
  • 2 teaspoon (10ml) boiling water
  • 1/3 cup (75g) unsalted butter room temperature
  • 1 cup (130g) all purpose flour
  • 2 tablespoons (12g) unsweetened cocoa powder
  • 1 egg yolk room temperature
  • 2/3 cup (65g) powdered sugar

Instructions

  • Preheat the oven to 350°F/175°C. Line a parchment paper onto a baking sheet or grease with cooking spray.
  • In a small cup mix hot boiling water with instant coffee until coffee granules are fully dissolved.
  • In a large bowl, soften unsalted butter using a rubber spatula or a mixer. Whisk softened unsalted butter and powdered sugar until combined. Then add the egg yolk, and whisk until incorporated. Pour the coffee into the mixture of butter and eggs and mix until combined. The mixture will turn into a light brown color.
  • Sift together flour and cocoa powder into the wet mixture. Mix until the dough looks like coarse crumbs. Do not over mix. Then use your hand to mix and press the dough until smooth. Make sure that you mix the cookie dough, not knead it. 
  • To shape the dough: Roll the dough into a long log. Divide the dough into 1-inch pieces. Then using your palm shape each one into an oval shape, press the middle line with a knife or a toothpick. They will look like coffee beans. Place your cookies onto a prepared baking sheet. Chill the dough in the refrigerator for about an hour. Transfer the chilled dough to the oven. Bake for 13-17 minutes. 
  • Remove cookies from the oven. Allow the cookies to cool on a wire rack. Serve cookies at room temperature. Cookies can be stored up to 5 days in the refrigerator.
