Rustic Strawberry Galette

This rustic strawberry galette is made with a flaky, buttery pie crust, filled with sweet and juicy strawberries with a touch of vanilla. It has all the goodness of a pie, but quicker and easier to make.

Here comes February with a little breeze over the blooming trees and sunshine through my kitchen window. Spring shall begin soon, yet here I come for fruit dessert recipes.

This rustic strawberry galette brings brightness to your table and will make you feel like spring, then summer is here. Whether you are using fresh strawberries from the farmer’s market or thawing berries you froze over the winter, the pie whispers warmer weather.

EASY STRAWBERRY GALETTE

The word ‘galette’ hails from France. It can refer to any flat round shaped pastry with a sweet or savory filling but most often refers to a free form rustic pie-like pastry. Galette is like pie, except it requires almost no skill at all. All you need to do is to roll out the pie dough into a disc, pile fruit in the middle of the dough and fold the edges! 

This galette is beyond delicious, simple, and pretty. You can swap the strawberries for your favorite berry, or use a combo of fresh berries. You can use fresh or frozen fruits. Either way, you can’t go wrong with this galette. Serve with vanilla ice cream or whipped cream for the ultimate treat.

 

FLAKY PIE CRUST

For the pie crust, you can either use the store-bought or make it at home. I’ve always made my own pie crust since it’s easy to make and it tastes better, plus you can make it ahead of time, wrap it in plastic and keep in the fridge. Here is how to make a flaky homemade pie crust with many tips for success. 

I recommend removing the chilled pie crust dough from the fridge and let it sit for 5-10 minutes before rolling out, or the dough is too cold and will crack. 

STRAWBERRY FILLING

The star of this pie is the strawberries, and there are plenty of them, so use the sweetest and most delicious strawberries you can find. I tossed them with a bit of lemon juice, sugar and cornstarch before piling them onto the middle of the crust, just to give some extra flavor and sweetness.

Ingredients

For Pie Crust

For Filling

  • 1 lb (454g) strawberries, hulled and cut in halves
  • 1/4 cup (50g) granulated sugar
  • 2 teaspoons (3g) cornstarch
  • 1 tablespoon (15ml) lemon juice
  • 2 teaspoons pure vanilla extract

For Brushing

  • 1 egg, beaten
  • 1 tablespoon coarse sugar (optional)

Instructions

  • Homemade Pie Crust: Make dough for galette crust following recipe instructions. Shape into a disc, wrap in plastic wrap and refrigerate for at least 1 hour or overnight (if you make it ahead of time).
  • Make The Filling: In a medium bowl, combine strawberries, sugar, cornstarch, lemon juice and vanilla extract and toss with a wooden spoon or a rubber spatula. Set aside.
  • Preheat oven to 375°F/190°C.
  • Assemble Galette: Place a disc of dough in between sheets of parchment paper. Use a rolling pin dusted with flour, rolling outwards from the center of the dough with an even pressure to make a large circle, around 10-12 inches in diameter (1/8-inch thick). Remove the top sheet of parchment, then transfer the dough to a baking sheet lined with parchment paper.
  • Arrange the strawberries in an even layer onto the crust, make sure to leave about a 2-inch edge uncovered with fruits. Pour any remaining juices left in the bowl over the fruit. Fold the edges over the berries and press slightly to seal them together.
  • Stir the egg in a small bowl with a fork to create an egg wash. Use a soft pastry brush to lightly coat the folds of the dough, then sprinkle with coarse sugar.
  • Bake the galette for 35-40 minutes or until the crust is golden brown and the fruit is bubbling. Remove the galette from the oven and let it cool before slicing.
  • Slice and serve galette warm with ice cream or whipped cream if desired. Enjoy!
